
Crustless Quiche
Veggies of choice (I used spinach and mushrooms, but most any kind will work)
1-1 1/2 cup shredded cheese (can use cheddar, swiss, best to use a mixture of a couple different kinds)
1/2 cup onion
2 cups milk
1 cup Bisquick (or can make your own mixture using flour, butter, etc.)
4 eggs
1/2 tsp salt
1/4 tsp pepper
1 tsp minced garlic
Heat oven to 400 degrees. Lightly grease pie plate (I use a quiche pan). Put veggies, onion, and cheese into a bowl and set aside. Beat the remaining ingredients (milk, eggs, Bisquick, salt, pepper, and garlic) until smooth in a blender. Pour liquid mizture into the bowl and mix all ingredients together by hand. Pour mixture into pie plate and bake 35-40 minutes, until knife can be inserted halfway between center and edge comes out clean. Let stand 5 minutes before serving. Makes 6 servings.
This was Brooke's brunch for us one day. Topped off with fruit & mimosas.
